Maitake mushroom

The Maitake or Hen-of-the-Woods mushroom (Grifola frondosa), which grows in the wild around the base of Oak, Elm, and Maple trees during the Autumn months, is also known as the “King of Mushrooms” since it may grow to be over 50kg in size. This lovely tasting gourmet fungus is as revered for its taste as it is for its health promoting abilities. It is a favorite of Japanese monarchy. China, Japan’s northeastern region, and North America are all home to this species.

Maitake mushrooms are recognized for their distinctive look, which resembles layers of chicken feathers. However, this isn’t the only attribute that has given the mushroom the nickname “hen of the woods.” Organic maitake mushrooms have a texture and flavor that is remarkably similar to chicken when cooked properly. These maitake, like our shiitake, are naturally produced on sawdust-based blocks on our farm!

Other names for this mushroom include hen of the woods, kumotake, dancing mushroom, Grifola frondosa, sheep’s head, champignon dansant, and king of mushrooms.

Health Advantages:

Polysaccharide, a complex carbohydrate made up of smaller sugar molecules, is found in maitake mushrooms. These have an effect on free radicals and help to normalize blood pressure and blood sugar. They also aid in the development and maintenance of a healthy immune system.

Maitake mushrooms contain complex polysaccharides that cause cancer cells to undergo apoptosis, or programmed cell death.

These mushrooms also have anti-angionenesis capabilities, which can prevent tumor-feeding blood cells from proliferating. As a result, they are an excellent anti-cancer food.
